The craft involves selecting and blending five grains (rice, glutinous rice, wheat, corn, and sorghum), fermenting the grain mash in ancient clay pits for up to 120 days, and distilling the fermented mash in traditional copper stills. Summer thunderstorms are common but can create dramatic photography conditions.
